One of the best things about eating an unprocessed, oil-free, nutrient-rich, whole food, plant-based diet is that unless you are overdoing the whole food fats like avocado, coconut, nuts and seeds, you can pretty much eat all the food you desire. That is why we elected not to include the serving sizes and nutritional information in the recipe section. When you are eating exclusively fruits, vegetables, beans, legumes, whole grains and starchy vegetables (and no more than one to two ounces of nuts or seeds) every day, there is no need for counting calories or weighing or measuring your food. If you eat when hungry, stop when full, and don’t eat animal products or refined and processed food (or if you must, keeping their intake to less than 10% of your total calories), you will no longer be obsessed with counting anything. And although we didn’t mention it, we think exercise is important too. But as Dr. Caldwell B. Esselstyn, Jr. says, “Diet trumps everything.” With these recipes we know that you will be able to enjoy food that comes from plants, instead of a manufacturing plant.
